I love starting class with a quick formative check on the content from the day or two before. These quizzes are typically just a couple of questions printed on a half-sheet of paper and are almost always open note. My goal with these isn't testing their retention of the content as much as it is evaluating their ability to apply the process. This also gives students an opportunity to receive feedback early on if they aren't fully understanding a concept.
